serves about 4-6 for a main dish.
in case you were wondering about the
name (and even if you weren't),
it's like a polish philly cheesesteak thing. only different.
ingredients
- 1 ring turkey or other kielbasa
- 2 bell peppers (you can go with two green, but i recommend a red and a green)
- 2 small to medium white onions (yellow's ok too)
- 1 can sauerkraut (drained)... you can use two if you're crazy about the stuff
- 2 cans mushrooms (also drained)
- olive oil, a few tablespoons (to coat pan)
- 4-8 slices (8 of the smaller square variety, 4 of the larger rectangle) swiss cheese torn of cut up into 2" or so pieces
- 4-6 hoagie rolls (depending on how many people are eating this and how much they like bread), sliced
- salt, pepper, garlic powder, to taste

- frying pan, a really large one (one of those 14" deals at least, if you don't have one, do this in a large pot) with a lid (or, lacking lid, a really large piece of tin foil)
- spatula
- chef's knife
- cutting boards- regular and meat board
prep work- slice up the onions and peppers into thin stips, and make them about and 1" tall. on the other cutting board, slice the kielbasa into thin pieces the short way (you can go for round, but if you can make them oval it's looks better) and then cut those in half the long way. squish as much extra water out of sauerkraut as you can, any way you please.
heat the pan on medium high. when you stick a drop or two of water in and it sizzles, put the oil in the pan and swirl it around to coat the bottom. stick in the onions and peppers, salt and pepper them to taste, and basically stir fry them for 5-10 minutes or so, or until the onion starts to turn a light brown shade. add kielbasa, and stir fry until it starts turning a bit brown.
dump in sauerkraut and mushrooms. yes, you guessed it, stir fry until sauerkraut (say it with me) starts turning brown. stir in garlic powder, taste, and see if you need more seasoning, add if you do. if you plan on serving right away, turn heat off, distribute the cheese evenly atop the pile, and put on lid (or tin foil).
check in a minute or two to see if cheese had melted. if it has, stir in into the mixture, if not, try the lid for a few more minutes. if still not melted turn the heat back on low for a while until it does. (note- if you plan on holding off serving for a while, turn it on low and do the cheese later.)
to serve, slice hoagie rolls down the middle leaving them hinged, warm up them in microwave a bit or stick them in a toaster oven (yes, until they turn a bit brown... this is starting to sound like a drinking game), stick on a large plate, and spoon tons of stuff in the middle. and yes, it's way messy to eat. it's good with baked potato fries (with that).
