an appitizer
ingredients
- 10 oz. fresh goat cheese (a costco sized log)
- 1/3 c. sour cream (yes, use the real stuff, not the light or fat free)
- 2-4 tbsp mixed fresh herbs (sweet or savory, not both)
- salt and pepper to taste

- medium-sized mixing bowl with deep sides
- cutting board
- knife
- spoon

let goat cheese get to room temperature. if your herbs are larger pieces, cut them into smaller bits, though you may want to leave a bit whole if you like the whole decoration thing. the kind of herbs you use is up to you, as is the amount. i'd recommend at least two that go together, and 2 tbsp if they're strong, more if not.
break up the cheese into the mixing bowl, and mix on low for a bit, until it breaks up. it will probably stick to the beater. add the sour cream (that's when the cheese will more or less come off the beater), beat until incorporated into the mixture, then add herbs, salt, and pepper, taste, and add more if necessary.
put into serving bowl to chill for at least an hour before serving, but take it out about half an hour or so before serving. goes well with crackers and knishes.
