is based on a rachel ray recipe)
ingredients
- 1 c. toasted walnut bits
- 1.5 c. feta, crumbled (sheep's milk for kickass, cow's for acceptable)
- 1/2 c. milk (or other dairy product in pourable form)
- 1 tsp dried oregano
- 2 tbsp flat leaf parsley ( 1 tbsp dried equivalent is ok and tends to not turn things green)
- fresh ground black pepper to taste
- 1/2 tsp crushed red pepper flakes
- 1-2 large clove(s) garlic (roasted)

combine all the stuff in a food processor until spread is smooth. chill at least an hour before serving, but let it sit out a bit, (half an hour-ish) before you want to serve it. if that makes any sense. it tends to taste better if you let it sit around longer, like a day or so. serve with pita chips or wedges, apple or pear slices, carrots or celery work also.
