ingredients
- a bag of frozen fruit (i recommend things in the berry family, and cherries, particularly market pantry cherries from target or anything from trader joe's)- unthaw overnight
- as much sugar as you have fruit (by volume)
- a lemon (or, in a pinch, real lemon juice), for juicing
equipment
- large glass dish (with very high sides) that will fit into your microwave
- measuring cup that's about 4 cups or more
- spoon
- airtight container for jam
put fruit into measuring cup to check the volume, remove it to the dish. put equal amount of sugar in cup, remove to dish. add a squirt of lemon juice and stir.
microwave the mixture for about 8-12 minutes, stopping after every minute to stir in the first five minutes, and every 30 seconds thereafter. after the first five minutes, keep an eye on the microwave, as spillovers tend to happen very quickly, and trust me, it's not fun to clean up.
fyi- the longer you keep it in the microwave, the thicker it gets. it also thickens more when it's cooled. it's a looser than commercially made jam, however.
remove dish from microwave. when it's cooled down, remove to airtight container, and store in the refrigerator for up to two weeks.
i can't say how much it makes, as it obviously depends on the size of the bag of the fruit you start with, but if you use a smaller one, you get a few cups of jam or so.
as for applications, it makes a nice topping on brie (especially if you use cherries).
