for 2-4 people
(depends if using as a one of many side dishes, or the only, and how much
said people love blue cheese)
ingredients
- 1 standard package of cole slaw
- 4 oz. blue cheese (this is way more than the original recipe calls for, but most people like it that way)
- 2-4 oz. blue cheese dressing, depending on how gloopy you like your cole slaw... you can start with two and add more at the end if you'd like
- 2 tbsp pickle juice (i use dill)... though in a pinch you can also use any light-coloured vinegar
- garlic powder to taste
- kosher salt to taste
- fresh ground pepper to taste
- crumbled cooked bacon (to top)- way optional (i don't use it)
equipment
- large bowl with cover (or use plastic wrap)
- mixing spoon
mix all ingredients (except optional bacon) together, seasoning to taste. chill for at least an hour, covered. check halfway through to see if you want to season more or add more dressing. add crumbled optional bacon just before serving.
serving note: especially kick ass on top of burgers (even the veggie kind), chicken sandwiches, or bbq sandwiches besides as a side dish.
recipe note: this is adapted from a recipe i saw on queer eye for the straight guy that was for a party for about 20 people, which is more than i usually need at once.
