serves: about enough for a smaller party
as an app (4-6)
adapted from those desperation dinner people i think
(the recipe was in the paper and i can't recall exactly).
it's for those times you want hummus and don't have tahini sitting around.
ingredients
- 1- 15 oz can garbanzo beans/chickpeas, drained
- 1- 13 oz can quartered artichoke hearts in water, drained
- 3-6 cloves of garlic, peeled (if you roast them they mellow a lot and add a depth of flavor, i'll leave that up to you)
- juice of 2 lemons, zest of 1 lemon
- paprika, kosher salt, pepper to taste
- handful of chopped flat-leaf parsley (optional, but it brightens the flavor a bit and looks good when serving if you sprinkle a bit on top)
- olive oil
equipment
- food processor
combine all but the oil in a food processor, pulse a few times, turn on and stream in oil until creamy. you can adjust seasoning after it gets to the consistency you want, just pulse a few more times after. good with all things you would use hummus with, and tastes a bit lighter and milder than hummus.
